Il Prosecco from Collavini is made with 100% Glera grape, in the Hills of the DOC Prosecco. Harvested at the end of September, its alcohol content is about 11% vol.
The Winemaking technique is absolutely without the skins, with very gentle crushing of the fruit and no maceration.
The second fermentation is at 14°C, followed by four months in sealed stainless steel tanks, with periodical swirling in order to favor the action of the yeasts.
The Wine is persistent, with a very fine and well-sustained perlage. It has a brilliant straw yellow color with greenish highlights. Fresh and fruity fragrances of apple, white flowers and bread crust. Round, lively and slightly aromatic palate with a touch of tartness and very good length.
