This time our Pairing with the Master brings you a variation of one of the simplest and most traditional Italian recipes, the pasta all’arrabbiata.

The “penne all’arrabbiata” are a traditional dish of Roman cuisine, even though there are many variations from the other Italian regions, such as the use of spaghetti instead of penne. It is a simple dish but heavy-bodied.

This dish has been re-discovered recently and it is often used when you need a quick and easy dish, that requires a short preparation and few ingredients. The penne (or spaghetti) all’arrabbiata are not an ancient dish; they were probably created in the beginning of the XX century by a creative chef who wanted to create a variation of the famous bucatini all’amatriciana.
