Alcohol and cooking is more than putting red wine in your pasta sauce or the occasional flambé. There are numerous way of using alcohol to give treats, appetizers and desserts a little edge.

Donna Hay wrote that she’ll only use alcohol for cooking if it’s drinkable. Don’t buy the cheapest bottle for your cooking but also don’t buy the most expensive one. As with any ingredient the higher the quality the better your end result will be. Although that award winning scotch is probably not going to come through completely in your pancake. Don’t use the cheapest wine either, if you wouldn’t drink it, don’t use it for cooking.
